With an umlaut over the first "u". The most common spelling.
Schuetrumpf

 

With an "e" after the first "u". If you can't type an umlaut, an "e" after the "u" (or other vowel) substitutes for the umlaut.
Schüttrumpf or
Schuettrumpf




 

Double "t". I assume this is an older spelling and that the other variations lost a "t" at some point. Names usually (I think) get shorter and simpler rather than the reverse. Also if the name is based on "schütteln" or "schütten" (see definitions below) that would explain double "t".

I have seen a copy of an old S. document with the spelling Schietrumpf. A typo maybe? There are Schietrumpf names listed in the German phone book. Could this be another variation?  In searching the internet I have run across some names that look so similar that I think they could be mis-spellings or typos. 
Definitions and Explanations
"schütteln" (verb) to shake
Holger Schüttrumpf told me:   The name Schüttrumpf has its origin from a part of a mill. This bottom part of a mill (we call it Rumpf) was shaken (schütteln). This is a possible explanation of the name Schüttrumpf which we use here. 
"schütten" (verb) to pour
Here is an excerpt from Etymologisches Wörterbuch by Friedrich Kluge: (Translation) Schüttrumpf (masculine) The family names Korntrumpf and Schüttrumpf (indirect occupational names of Millers) have their origin in (Rumpf) trunk, in the sense of "grain funnels in the mill". 
He also talks about the  Westphalian (Westphalia is a German state) form "Schüdderump" was a type of "dump cart"
Rumpf (masculine) trunk (I think as in "main part" like a tree trunk)
